After several years of researching the KGC in Texas, I believe that your suggestion that it may have been a Knights of the Golden Circle flag is a valid one. One of the organization's flags consisted of a single 5-point star, otherwise known as a "Lone Star". One of the KGC's forerunners was the Order of the Lone Star which was instrumental in the successful Texas Revolution.
