There has been a surge since the late 1950's in histories about the war in Missouri, which was neglected in favor of more glorious theaters of the war previously. I strongly recommend you use your local library and ask some questions about what is available. Even if you do not live in Missouri or close by, Interlibrary Loan is a good friend to have. I personally don't recommend anyone go out and purchase lots of Missouri Civil War books until they have a chance to examine them and see how they approach the topic. There is a lot of variety both in subject matter and quality of the many books of recent years.

I will get you started with two basics you should be able to find in most libraries of any size, and I believe these are both still available for purchase in reprints:
--Richard S. Brownlee, "Gray Ghosts of the Confederacy: Guerrilla Warfare in the West, 1861-1865," Louisiana State University Press, 1958;
--Michael Fellman, "Inside War: The Guerrilla Conflict in Missouri During the American Civil War," Oxford University Press, New York, 1989 (Fellman is very good at describing how the war affected families, and what is was like to live through the war in Missouri. There were so many copies of Fellman published that I have seen paperback copies selling for a dollar in the online purchasing media.

Since you are interested in the guerrilla war in NE MO (including behind-Union-lines Confederate recruiters) I also recommend:
--Joseph A. Mudd, "With Porter in North Missouri: A Chapter in the History of the War Between the States," The National Publ. Co., Washington, D. C., 1909 (Mudd may be a little harder to find in most libraries, but well worth your time. I seem to recall this was reprinted in the last 20 years or so.).

About Callaway County in the war, you may wish to examine the little bit about it about pages 390 through 400 or so in:
--National Historical Company, "History of Callaway County, Missouri," publ. by National Historical Company, St. Louis, 1884, but this may be harder to find than those I listed above. The war was particularly bitter in Callaway County during the war to the extent that during the big craze of publishing county histories between 1881 and World War I local historians evidently thought it best not to stir those feelings again and avoided writing about the war, much to the loss of present-day Callaway Countians. The pages I referenced in this 1884 book did cover the Battle of Moore's Mill of 28 July 1862 in some detail, to which I referred in one of my replies to you in this exchange.

There are lots of other books covering different topics of the war in Missouri, and a few about Arkansas, as well. Is there any particular topic about the war beside what I listed above that interests you?
