The marching ration in the US army was 1 1/4 pound of beef or 1 pound of pork per man per day. Likewise 1 pound of bread-either softbread or hardtack. Coffee and sugar as per standard table.-That's it, all the other stuff on the ration tables were only issued in fixed camp.

The rations were issued unpackaged and it was up to the individual to wrap or package it for carry in whatever mode he had access to. Most common were placing it in 'poke bags' or wrapping it in scrap cloth or even cartridge packet wrapping paper. Some of the period descriptions of the haversacks after a few months use would gross you out.
