Yellow Jacket Battn. uniform quote?

Dear Fellow Louisiana-Descendants and Louisianians:

I am passionately interested in early-war uniforms and am thinking about having a yellow jacket made in honor of the Louisiana Yellow Jacket Battalion.

I understand that there is a post-war quote somewhere attributed to Maj. Arthur F. Simon, wherein the good major states that the unit did, indeed, go out in yellow (cottonade?) jackets and were named for their jackets and not the stinging insect.

Does anyone have the exact quote and source?

I'd hate to part with some scarce bucks and find that I had purchased such a colorful uniform in error!

Also, what would be your best guess as to trim color? Black, as was common in the LA state-issued uniforms?
