Bergeron printed a brief article on this regiment in his book, Guide to Louisian Confederate Military Units, pp. 69-71. Officers of these companies were discharged, so I would assume they were dispersed rather than transferred as two new companies. Here are my notes from the 21st Alabama:

Company “G” of Mobile County “Southern Star Guards”

Silvestro Festorazzi. Relieved June 27, 1862, no longer having a command.

Organizing on May 2, 1861, members entered Confederate service at Mobile, Alabama, October 7, 1861. Enlisted men were transferred to the 1st Louisiana Infantry Regiment (Regulars) on June 27, 1862.

Company “H” of Mobile County “Mobile French Guards”

Charles L. A. DeVaux. Wounded at Shiloh, Tennessee, April 6, 1862. Relieved on June 27, 1862; appointed regimental recruiting officer on July 30, 1862.

Entering state service January 19, 1861, members reformed under Captain Augustus Poitevin on June 2, 1861. They held elections for Confederate service on October 12, 1861, for which officers received commissions three days later. Enlisted men transferred to the 1st Louisiana Infantry Regiment (Regulars) on June 27, 1862.
