You have several choices. There was a George W. Bowling that was in the 63rd Regt. Tennessee Inf. He settled in Texas long after the war and was buried in Rusk County in 1925. The only thing close to a Texas confederate is W. Bowling in Co. F 22nd Regt Texas Infantry and William Bowling in the 10th Texas Cavalry (Locke's). There are several other George W. Bowling's in Tennessee, Kentucky, Virginia and Mississippi Confederate units. His name may have been George Washington Bowling. The one buried in Rusk, County Texas was born in Kentucky March 5, 1837 and died in Texas January 14, 1925.
