Frank the taste depends on a lot of thing . In my opinion if they are caught inside the Islands they are nasty tasting. The reason for this is they are a bottom feeding fish and the Mississippi sound is muddy. Catch them around the sandy bottom of Ship Island and they taste "cleaner." We always filet our fish and soak them in lemon juice and milk to get rid of the nasty taste. I Zatarain's fish fry to deep fry my fish, using these steps I get a pretty good product. Truth of the matter is when you are hungry taste is not so important.

Give a fried piece a chance sometime, who knows you just may like it.
