You might find Hardee's Tactics interesting as it indicates the position each officer and non-commissioned officer was to take during maneuvers. Although written several years before the war, and adopted by the United States Army, it was also used as the manual of arms of the Confederate States Army. Of course, it didn't hurt, I'm sure, that the author became a general in the CS Army. Although not always adhered to by the letter, particularly as new tactics were developed of necessity later in the war, it does provide a window into the training of the fighting men of the time.
I'm not positive about the rank insignia, but I think only the First Sergeant and Sergeant Major wore anything other than a three strip chevron with the V pointed downward. I stand to be corrected, if in error.
