As I remember (Several years ago I looked at this.) the Steam Boat did not go to Minden proper,
I got the impression that the Bacon - Pork was taken in Wagons to some point.
This would fit. Probably the Bayou was Navagable at High and Very High water as far up stream as Minden.
The Red was treacherous without enough wter except inthe Late winter and Spring,
in this case First part of Arpil,
Thus the Boat entered the Bayou as far as possible and the Pork was brought to it.
