The John Winter book mentioned by Terry Jones is a very good one for your purposes. I had the pleasure of taking American History with Dr. Winter as the professor in 1960 and 1961, a great experience. Another source is the book by Jefferson Davis Bragg, "Louisiana in the Confederacy," LSU Press, 1941. There is a 1969 reprint also.
