Receipe for Tomato Catsup Extra good by a Lady of Griffin Georgia
1/2 bushel of ripe Tomatoes
8 boxes of mustard
3 lbs of brown sugar
1 lb of salt
1 qt vinegar
1/2 lb black pepper
1/2 lb all spice
1/2 lb Cloves
6 large onions
1 handful of peach leaves
2 ox of India Cayenne Pepper (common red will answer.)
Simmer the whole thre hours, then strain through a wire seive or course muslin. Bottle and seal closely and keep as age improves the catsup - Griffin Confederte States.
