I have seen a number of photos, and etchings and paintings (hopefully from 'real life') where the center star is a six-pointed star.
I would suspect that as officers purchased their own uniforms perhaps they went with a six-pointed star to have a bit of panache?
There are flags with six pointed stars, as compared to the 'normal' five pointed star.
