Perhaps you can find someone who can help you locate your ancestor at the time of the war. Men usually enlisted in units raised near there homes. That's why where your ancestor lived in 1860 is important to this search.

There are four Maddoxes with the first initial "S" who joined companies from Georgia and Alabama. These are:

S. F. Maddox, Co. "G", 63rd Georgia;
S. G. Maddox, Co. "G", 50th Alabama;
S. J. Maddox, Co. "B", 8th Alabama;
S. C. Maddox; Co. "B", Hardie's Ala. Cav. Battn.

On the little we have to go on, Starling Maddox might be any of these men or none of them. We just need to know more about him.
